Button & Co. Bagels Opens this Fall!
“Asheville needs a good bagel shop,” a sentiment that most native Ashevillians share, and most visitors probably note in passing through. The Katie Button Restaurants team agrees!
This fall, Katie Button Restaurants will be jumping into a new counter-service concept, Button & Co. Bagels. Chef Katie Button and team’s third Asheville restaurant will be located in the storefront beneath sister restaurant Nightbell.
Chef Katie and Felix spent time in New York City last fall, visiting all the bagel greats along the way including Sadelle’s, Black Seed and Russ & Daughters. The idea for the bagel shop stemmed from her own cravings upon return!
Button & Co. Bagels is Chef Katie Button’s take on the classic bagel + sandwich shop. Given the accessibility of the highest quality local ingredients, the bagels and fixings will echo Asheville’s Appalachian roots, with a focus on sustainability. Bagels will be made onsite using a house-made sourdough starter and blend of local, single variety flours from Asheville grain miller, Carolina Ground. Just like those New York bagels that everyone knows and loves, they will be boiled then baked.
Guests choose from plain, rye, smoked salt, seeded and everything varieties and seasonal flavors like fig & and sorghum, served with toppings ranging from house made gravlax, smoked trout cream cheese featuring Sunburst Trout, and sable rubbed with sumac to creamed cheese made by 3 Graces Dairy in Madison County (rotating flavors mixed in-house) and fruit preserves.
Button & Co. Bagels will also offer a line of house made and bottled sodas in classic flavors such celery, root beer and strawberry along with freshly-pressed juice and shrub options for guests to enjoy.
